There are lots of ways to stop the other guy.  Great books on stopping the offense are available here.  There are as many books on coaching the defensive side of the ball as there are ways to do it.

Rex Ryan has shown himself to be a defensive genius.  The 46 Bear Defense was created by his father, Buddy Ryan.  It was the defense that shut the New England Patriots down in Super Bowl XX.  This defense uses an aggressive style, and is effective in stopping the run as well as the pass.  Great for installing the 46 Bear Defense, but also includes lots of great ideas on defense in general.
